Join us on June 19th for our first event collaboration with TTW: Mexican Whole Hog Open Pit - a true pig pickin' party!

The menu will include all the fixin’s needed to make three Mexican whole hog tacos. Choose from salsa macha, salsa verde, escabeche, and Mexican mop sauce, add any combination of those items to 3 house-made Nixtamal tortillas, and you’ll have some whole hog bbq heaven in your greasy little paws. The meal includes two sides; Hatch green chili red potato salad and refried beans. Slurp all that down with 2 beers of your choice from Ratio Beerworks, polish it all off with a piece of Tres Leches cake, and that is what’s called a Father’s Day feast!

What is Mexican Whole Hog?

"Mexican whole hog is my current labor of love," says TTW Chef and Owner, Kevin Morrison. "It combines two big passions of mine, Mexican food, specifically tacos, and Carolina style open pit bbq. I love the tradition and simplicity of Carolina open pit bbq. He says the recipe is pretty simple: build a pit out of cinder block, create perfectly temperature coals in our burn barrel, add a happy pig, and spend 12-15 hours carefully watching over the pit and coals. "This is my way to celebrate two amazing cultures. Barbecue is not just a food style, it’s about celebrating, having a reason to get together, slow down, connect with others, and be thankful.”

What is nixtamal?

Nixtamal dates back 3500 years to the native Mesoamericans. It is a simple but labor intensive process of cooking and steeping dried corn kernels in a solution of water and alkali, resting overnight. The corn is then rinsed, and hand rubbed to remove the bran (the outer shell of the kernel). The corn is then ground and mixed into masa flour to make our tortillas. We use a very special variety of organic, non GMO, heirloom corn from Oaxaca and Michoacan Mexico

The ticket price includes a full meal plus 2 beers from Ratio (21+). Purchase two tickets and receive chips and a choice of (one) salsa, guacamole, or queso dip!
